This yummy, nutritious breakfast or dessert comes together really quickly and is sure to please!

Yield:

4 generous servings

 

Ingredients:

  • 2 cups plant-based milk, unsweetened
  • 1 large peach, pitted and coarsely chopped
  • ½ cup dates, stems and pits removed, coarsely chopped
  • fresh grated nutmeg, to taste
  • ½ cup plus 2 tablespoons chia seeds
  • toppings, optional

Directions:

  1. In a blender, process plant-based milk, peach, and dates until smooth.
  2. Pour into a mixing bowl, carefully scraping out the blender to reduce waste.
  3. Add nutmeg to taste.
  4. Stir in chia seeds, mixing well to combine.
  5. Refrigerate for several hours or overnight so it will set up before serving.
  6. Spoon into small dishes
  7. Garnish with toppings such as fresh fruit, chopped nuts, or flowers.
  8. Serve.

Notes, Substitutions, and Variations:

  • Instead of refrigerating overnight in the mixing bowl, you can spoon the pudding into individual containers before refrigerating.
  • Try substituting freshly ground cardamom seeds, ground cinnamon, coarsely ground black pepper, or cayenne for the nutmeg. Or try some orange or lemon zest.
  • Try other fruits, such as strawberries, pears, or apricots.
  • You can add alcohol-free flavorings or essences such as vanilla, rose, apple, or almond.
  • Make a pudding parfait by alternating layers of the pudding with layers of chopped fruits in champagne glasses or small mason jars. Top with fruit and/or a sprinkle of nuts.
  • You can adjust the thickness of the pudding by using more or less chia seeds.
